Recipe: Buckwheat pancakes with cardamom and lemon drizzle

If there is anything they love in Sweden, then it has to be cardamom. Swedes use it in really all dishes you can think of and in every little town there is some shop called “Kardemuma”. That is why I wanted to create a recipe with this spice for quite a while now. Preferably a pancake recipe. In Sweden it is a tradition to eat peasoup and pancakes on thursdays. I still don’t know where that tradition comes from, but I do know that I really like the tradition.

Because I love it to create my recipes with a healthy twist, I let my imagination run wild and I created these healthy buckwheat pancakes with cardamom and a lemon drizzle.

What you need (1 portion):

  • 100 grams buckwheatflour
  • 2 tablespoons chia seeds
  • 200 ml almond milk
  • 2 to 3 teaspoons grinded cardamom
  • 1 tablespoon organic honey
  • 1 banana
  • zest of half a lemon
  • oil (to bake the pancakes)

For the drizzle:

  • 1 teaspoon coconut oil
  • 1 tablespoon organic honey
  • lemon zest

What you need to do:

  1.  Put all ingredients for the pancakes in a bowl and mix till a smooth batter remains.
  2.  Warm up the oil and bake your pancakes. (dûûh)
  3.  In order to make the drizzle: Mix the coconut oil with the honey and spread it on top of the pancakes.
  4.  Finish the dish by grating some lemon zest on top of your pancake pile for a culinary touch.

Using cardamom in pancakes already was really tasty, but combining the cardamom with the fresh flavour of the lemon and drizzle makes this combination irresistible. Eat these pancakes for lunch or for breakfast, whenever you feel like it.
